(makes approx ½ gallon)

8 oz. Glace de Veau Roasted Veal Stock Reduction
2 tbsp. chopped fresh shallots
1/2 tsp. chopped garlic
8 large avocados (peeled and pitted)
¼ cup fresh lime juice
2 cups heavy whipping cream
3 cups water
1/2 tsp. ground cumin
1/2 tsp. hot sauce
Dash cayenne pepper
Salt, to taste

GARNISH:
Shredded chicken
Sour cream

PLACE Glace de Veau Roasted Veal Stock Reduction, shallots and garlic in a sauté pan. Bring to a gentle simmer for 3 to 4 minutes. Remove from heat; cool to room temperature. Transfer to a food processor.

ADD avocados, lime juice, whipping cream, water, cumin, hot sauce, cayenne and salt to taste to food processor with Glace mixture; blend until smooth.

GARNISH each serving with shredded chicken and a dollop of sour cream.
